Gluten Free Cardamom Apple Bundt Cake

- 1 Cup Unsalted Butter 2 Sticks
- 1/2 Cup Vegetable Oil
- 1 Cup Granulated Sugar
- 1 Cup Brown Sugar Packed
- 3 Large Eggs
- 1½ Tsp Vanilla Extract
- 1½ Tsp Cardamom
- 3 Cups Gluten Free Flour Blend w/ Xanthan Gum *You can use AP Flour, however, you will want to decrease the oven temperature to 350°F
- 1 1/2 Tsp Baking Soda
- 1 Tsp Salt
- 3 cups Apples Peeled and Diced
Glaze
- 2 Cups Confectioner's Sugar
- ¼ Tsp Cardamom
- 2 Tbsp Apple Cider or Milk
Cake Batter
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In the bowl of a stand mixer, cream together the oil, butter, granulated sugar, and brown sugar.
Add in the eggs and mix to combine.
Add the vanilla and cardamom and mix to combine.
Add the flour, baking soda, and salt and mix to combine.
Add the chopped and peeled apples and mix to combine.
Scoop into the prepared Bundt pan and spread until evenly distributed.
Bake at 375°F for 50 minutes to 1 hour or until a toothpick or skewer comes out clean.
Cool completely before turning out of the pan.
