Gluten Free Cardamom Apple Bundt Cake

  • 10 Cup Bundt Pan
  • Stand mixer

Ingredients
  

Cake

  • 1 Cup Unsalted Butter 2 Sticks
  • 1/2 Cup Vegetable Oil
  • 1 Cup Granulated Sugar
  • 1 Cup Brown Sugar Packed
  • 3 Large Eggs
  • Tsp Vanilla Extract
  • Tsp Cardamom
  • 3 Cups Gluten Free Flour Blend w/ Xanthan Gum *You can use AP Flour, however, you will want to decrease the oven temperature to 350°F
  • 1 1/2 Tsp Baking Soda
  • 1 Tsp Salt
  • 3 cups Apples Peeled and Diced

Glaze

  • 2 Cups Confectioner's Sugar
  • ¼ Tsp Cardamom
  • 2 Tbsp Apple Cider or Milk

Instructions
 

  • Preheat oven to 375° F.
  • Butter and flour a 10 cup Bundt pan, and set aside.

Cake Batter

  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In the bowl of a stand mixer, cream together the oil, butter, granulated sugar, and brown sugar.
  • Add in the eggs and mix to combine.
  • Add the vanilla and cardamom and mix to combine.
  • Add the flour, baking soda, and salt and mix to combine.
  • Add the chopped and peeled apples and mix to combine.
  • Scoop into the prepared Bundt pan and spread until evenly distributed.
  • Bake at 375°F for 50 minutes to 1 hour or until a toothpick or skewer comes out clean.
  • Cool completely before turning out of the pan.

Glaze

  • Whisk all ingredients together. This will be a very thick icing.
  • Use a spoon or piping bag to top the cake.
