So there’s this whole new fasting trend, where people aren’t eating breakfast. In my opinion, breakfast is the best meal of the day. It has all the best foods, pancakes, crepes, french toast, cereal, eggs and bacon, or perhaps even sausage and WAFFLES. It’s all the good stuff. Brunch is great too, it’s an excuse to eat breakfast for lunch–and pair it with booze. And then there’s brinner. Breakfast for dinner, which happens all the time at my house. No matter what meal of the day, I like sweet breakfast food, but when it takes a savory turn, I am here for it. These cheddar and chive cornmeal waffles make a great addition to a savory breakfast or anytime meal.

Now let me start out by saying that I’ve had my fair share of waffles. I’m a bit of a waffle maven. I’ve eaten all sorts of shapes and sizes. Traditional, berry, chocolate, you name it. And one of my absolute favorite dishes to order when I am out to brunch is chicken and waffles. But once I had to go gluten free. My love of waffles quickly became problematic.

Don’t get me wrong. I still love to eat them, I just don’t like that I swell up like a balloon the next day. One morning, when I awoke with a crazy craving for some savory breakfast, but didn’t feel like dealing with the aftermath of ingesting gluten, I came up with this cheddar and chive cornmeal waffle recipe.

I paired these waffles with some fried eggs, and drowned them in homemade salsa. It was an excellent sort of TexMex way to start the day. At least I think it was TexMex. I am a lifelong Michigander that has never been to either Texas or Mexico. Facepalm.

TexMex or not, I know that you’ll have a delish breakfast if you add these waffles to your next breakfast spread!

Cheddar and Chive Cornmeal Waffles

These cheddar and chive cornmeal waffles make a great addition to a savory breakfast or anytime meal.

Equipment

  • Blender (High powered)
  • Waffle iron

Ingredients
  

  • 2 Eggs
  • 1 1/2 cups Milk (non-fat is fine)
  • 1/2 cup Sour cream (Non-fat fine here too)
  • 2 Tbsp Butter (melted)
  • 1 2/3 cup Cornmeal
  • 1 cup Gluten free 1-1 baking flour
  • 1 Tbsp sugar
  • 1 tsp Salt
  • 1 Tbsp Baking powder
  • 1 tsp Paprika
  • 1/4 cup Chives (chopped)
  • 1 cup Extra sharp cheddar cheese

Instructions
 

  • Preheat waffle maker.
  • In a high powered blender, blend together eggs, milk, sour cream, and melted butter. 
  • Add in cornmeal, flour, sugar, salt, baking powder, paprika and blend until incorporated.
  • Place chives and cheese in the blender, and give a quick pulse to mix.
  • Spray waffle iron with non-stick spray or olive oil.
  • Use a large cookie scoop to portion batter onto the waffle iron. Close the lid and cook for 4-5 minutes. Waffles are done when they are golden.
