Is there anything more beautiful than a Bundt cake? The stunning designs, the somewhat crunchy exterior yielding to a beautifully tender interior, there’s a whole lot to love. This Gluten Free Cardamom Apple Bundt Cake is all of those things; packed with fresh apples and fragrant cardamom this is a Bundt cake that’s sure to please.

Where to get Bundt pans

Troubleshooting Bundts

For as beautiful as bundts are, they can be a bit finnicky. Ornate pans with cracks and crevices are often sticking points for batter; this can cause chunks of your cake to split and rip out when you remove the loaf. To combat this unfortunate phenomenon, butter every little crack and crevice in the pan, and flour it.

Another issue with bundt is pan sizing. When you make a bundt, you want to be sure you are using the correct size pan. This recipe calls for a 10 cup bundt pan, any bundt pattern will do, as long as it is 10 cups. The most common sizes of bundt pans are 6, 8, 10, and 12 cup sizes, so make sure you choose the proper size pan for the recipe you are endeavoring.

Dialing up the flavor

This bundt cake is packed with bright flavors, which is a stark contrast to the typical warm flavors that are paired with apples. The brightness of the apples and the cardamom makes this cake taste less heavy than other flavor combinations in the fall. Perfect for a snack, and even better with a cup of warm coffee.

This cake contains a lot of fat. So while it may taste lighter based on the flavor profile, do not get me wrong, it’s still contains calories. The amount of butter in the cake does add flavor and richness, it also helps keep it moist along with chunks of fresh apples.

Making the Glaze

To create a smooth glaze, be sure to sift your sugar. It will remove chunks that can be hard to whisk out. This bundt recipe’s glaze is very thick, it allows it to cling to the crevices, so do not be alarmed, it’s meant to be that way.

Gluten Free Cardamom Apple Bundt Cake

Equipment

  • 10 Cup Bundt Pan
  • Stand mixer

Ingredients

Cake

  • 1 Cup Unsalted Butter 2 Sticks
  • 1/2 Cup Vegetable Oil
  • 1 Cup Granulated Sugar
  • 1 Cup Brown Sugar Packed
  • 3 Large Eggs
  • Tsp Vanilla Extract
  • Tsp Cardamom
  • 3 Cups Gluten Free Flour Blend w/ Xanthan Gum *You can use AP Flour, however, you will want to decrease the oven temperature to 350°F
  • 1 1/2 Tsp Baking Soda
  • 1 Tsp Salt
  • 3 cups Apples Peeled and Diced

Glaze

  • 2 Cups Confectioner's Sugar
  • ¼ Tsp Cardamom
  • 2 Tbsp Apple Cider or Milk

Instructions

  • Preheat oven to 375° F.
  • Butter and flour a 10 cup Bundt pan, and set aside.

Cake Batter

  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In the bowl of a stand mixer, cream together the oil, butter, granulated sugar, and brown sugar.
  • Add in the eggs and mix to combine.
  • Add the vanilla and cardamom and mix to combine.
  • Add the flour, baking soda, and salt and mix to combine.
  • Add the chopped and peeled apples and mix to combine.
  • Scoop into the prepared Bundt pan and spread until evenly distributed.
  • Bake at 375°F for 50 minutes to 1 hour or until a toothpick or skewer comes out clean.
  • Cool completely before turning out of the pan.

Glaze

  • Whisk all ingredients together. This will be a very thick icing.
  • Use a spoon or piping bag to top the cake.
